1.25.11 Fish Tales

Sardines are like the girl who is considered frumpy and uninteresting in high school, and then suddenly becomes a hot anchorwoman or a triathlete. Familiar but surprising. They've always been there, hanging out in the cupboard in their dusty can with the peeling label, but guess what? It's time to tuck in to those silvery little fish. They've got game. Because they occupy the bottom of the aquatic food chain and feed solely on plankton, sardines don’t carry the high concentrations of heavy metals and contaminants that other fish can. And they're brimming with nutrition. Not only that, they've got culinary cred. Gabrielle Hamilton, the chef of Prune, in New York City, serves canned sardines on Triscuits with Dijon mustard and cornichons. She swears by  the Ruby brand from Morocco. I've had good luck with Matiz Gallego from Spain, Angelo Parodi from Portugal and Bar Harbor from Maine. For other recommended brands, see here.

1.19.11 Alphabet Soup

Actually, this wintry soup has none of those letter-shaped bits of pasta. This is a post-modern alphabet soup, one you can load up with vegetables that represent virtually every letter, from artichoke and broccoli to winter squash and yam. The more the merrier, basically. I'm not eating any grains or starches for a while, so I used shallots, leeks, onions, garlic, celery, fennel, carrots, mushrooms, green beans, chard and tomatoes. Potatoes, parsnips, wild rice, farro and/or pumpkin would also be lovely additions. You can make it with water, but vegetable stock—or beef or chicken—will vastly improve the flavor. I used stock made from our Christmas goose carcass! This is such an easy recipe. Throw it together in 20 minutes, let it bubble on the stove for a while and then serve it with some delicious bread. You don't even need a salad because it's so loaded with vegetable goodness.

1.18.11 Little Green Monsters

This post is a command performance. I need a recipe for lentils, said Stephanie. Madam, this one's for you. Before I get down to it, I'm going to interject a bit of shameless self-promotion. Take a gander, here.Now, back to business: the lentil. I'm a big fan. I like the khaki brown ones in a creamy soup garnished with spiced yogurt; I like soupy yellow dals with Indian food; I like the orange ones pureed with coconut milk and garnished with cilantro. They are all nourishing and satisfying and delicious. But I especially love the Puy lentils (lentilles de Puy), the small, blackish-green legume (aka pulse) that hails exclusively from the Auvergne region in France. Somewhat similar to the black beluga variety, Puy lentils are less starchy than brown lentils and retain their form when cooked. Their nutty, mineral-rich flavor is attributed to the way they are grown: in volcanic soil, without watering or fertilizer. They carry the AOC (appellation d'origine controlée) that guarantees their provenance and quality. (For a look at other types of lentils, see here.) Puy lentils' firmness makes them ideal for salads, and they are delicious eaten with sausages or salmon or cheese.

1.17.11 In Defense of Meat

I've spent quite a lot of time ruminating over this post. Like a cow chewing its cud, I have carefully digested everything I've gleaned from reading Fast Food NationOmnivore's Dilemma, In Defense of Food, Eating Animals and Food Matters, and watching Supersize Me and the incredibly eye-widening Food Inc. At the very least, I think I can say I'm a conscious eater. I'm not going to delve into the horrifying truth of how government and industry conspired to convince us that we all need to have a big slab of (corn-fed) meat at the center of most of our meals on a daily basis, I'm just going to say that we should all be eating a great deal less of the stuff—for our own sake and that of the planet. But a recent article in Vanity Fair, where fluffy blonde wellness "guru" Kathy Freston (Tom Freston's wife, so she can't be far from her own show on Oprah's new network) convinces a die-hard British carnivore to turn vegan really got my hackles up because of its one-sided presentation of the issue.

1.13.11 Radish Fetish

I've been quite taken of late with all the little vegetable dishes on offer at restaurants of all sorts. Starters often include numerous ingeniously composed salads that really let seasonal produce shine. Sides are no longer merely a choice between boring steamed broccoli or french fries, and I've been known to make a whole meal from the enticing options—pureed squash with hazelnuts, chile-sauteed broccoli rabe, ragù of mushrooms, polenta with gorgonzola, fennel braised in cream. I think I've mentioned to you a few lovely meals I've had recently at A Voce, Missy Robbins' Italian-inflected restaurant in New York City's Time Warner Center. The lunch menu includes a selection of verdure, small vegetable dishes like eggplant with calabrian chile; beets with pistachios and orange; cauliflower with almonds and raisins; and a delightfully simple salad of radishes with an anchovy vinaigrette. After trying this last combination, I began craving it at home. It's crisp, salty and satisfying while still being light and healthy.

12.22.10 Orange Genius

With all those rich roasts and braises, the patés and terrines, the confits and caramels, the puddings and petits fours, you need something tangy and vibrant to spark your palate, no? I've been enjoying cooling glasses of seltzer, lightly flavored with lemon-rosemary syrup. Quite a tonic. And a tart, juicy clementine can really hit the spot. I also rely on green juices to keep me honest, though I don't suppose that's actually a good way to kick off a holiday meal. But what about a bowl of brilliant orange carrot soup enlivened with lots of spicy ginger and a warming hint of cumin? The great thing about this soup is that you can adapt it to suit your mood and what you've got in your fridge. Stir in some buttermilk, or a tiny bit of cream. Add chopped jalapeño, or cilantro or dill. Got some stale bread? Make croutons to float in your soup. You can even forget the carrots and ginger and use broccoli, or potatoes, or squash. What I'm trying to say is that you can invent a fantastic vegetable soup by following a few basic steps I will lay out here for you.

12.16.10 Sunny Side Up

I'm a sucker for citrus. It's such a relief when oranges, grapefruit and lemons begin flooding in from California and Florida at this time of year. Although I adore very tart lemons, I also love the lightly sweeter and more perfumey Meyer variety. Their smooth, thin skin is an electric golden yellow that seems to compensate, just a bit, for the lack of sunshine these days. I grabbed an armload at Fairway yesterday and, since they are a bit fragile and don't keep for so long, I'm going to immediately turn them into syrup and marmalade. The former will make wonderfully refreshing spritzers, especially with the addition of fresh rosemary. The latter will nicely cut through the rich fattiness of roasts or perhaps even our Christmas goose. And, of course, you can always preserve some lemons, as I've done again this year. 12.1.10 Plenty Good

After avidly perusing London-based Yotam Ottolenghi's contributions to The New Vegetarian on The Guardian's website, and reading various reviews of his cookbook (including this one) as it swept the latest Piglet cookbook contest on Food52, I finally pulled the trigger and ordered my own copy of Plenty. It looks like there's an American edition coming out in March, but it's not such a big deal to convert to metric if you have a handy kitchen scale like this one. (I use mine constantly, it takes up no space at all, and is so worth the $35.) Ottolenghi, who owns four eponymous restaurants in the UK, is not a vegetarian himself, but the book contains 120 vegetarian recipes that reflect his Mediterranean background, his original and exciting use of fresh ingredients, and his passionate approach to vegetables. I can't wait to get my hands on my copy. In the meantime, I made one of his recipes published in The Guardian and it came out great. This crisp, fresh salad of celeriac, apple, quinoa and poppy seeds is lightly dressed with a tangy sweet-sour dressing.

11.24.10 Prelude to a Feast

I don't want to harsh your mellow, and I do know that Thanksgiving is a special day—a time to throw caution to the wind and loosen your belt—but I just read that "more than half of Americans will have diabetes or be prediabetic by 2020, at a cost to the US health care system of $3.35 trillion, if current trends continue unabated." Staggering, no? To what trends does this refer? Too much processed food, too much sugar, too much fat. So I'd like you to reconsider the cream-laden dips and greasy chips that seem to be so popular for snacking on before the big turkey feast. All those cheese plates and fistfuls of roasted nuts that go so well with the wine and cocktails you'll inevitably be knocking back. Look, I'm no killjoy. I want you to indulge! But I also want you alive and healthy and fitting into your skinny jeans. So ponder some of these options, starting with a plate of fresh, crunchy, spicy watermelon radishes—in season now!—irresistible when sprinkled with flaky Maldon sea salt and perhaps drizzled with a little green olive oil. It's the perfect way to really wake up your palate.
