2.9.17 Easy Does It

February has arrived and it's been brutal over here. The days are short and grey. The sun is elusive. Fortunately, the birdseed with which we carpet the yard attracts a lively crew of feathered friends that brings some welcome distraction. Prehistoric-looking wild turkeys stroll in on spindly legs and scratch at the snowy ground with their long toenails. Woodpeckers go at the suet cakes like red-headed sledgehammers. The stellar jays are pugnacious but the petite chickadees—the sorority girls of the bird world—never seem to notice. It's dark by 5:30 and, to be perfectly frank, thoughts turn quickly to cocktails. Just so you know, I'm not much of a drinker; have never been able to hold my liquor. Two cocktails will often be one too many, so I go easy. But lately, there have been a lot of sharp edges that need softening and there's something so comforting about the ritual of closing the day down with a drink. Know what I'm saying?

11.24.15 Thank You (Falettinme Be Mice Elf Agin)

Another month has passed. Are you the same? I'm not. I feel my roots shifting and it's exciting and scary. My jaw sometimes feels weird when I wake up in the morning and I know I have been clenching my teeth as I sleep. Change is good but it can wreak havoc. I have started to emerge from behind my desk, making forays into the world beyond just sending my words out to be read. There I am, above, serving cocktails at an event created by And North; read about it here and check out the cocktail recipes here. Saying yes to many things also entails saying no a lot. Does that make any sense? Redefining your life is a process and I feel like I am approaching a tipping point.

3.13.13 Smooth the Way

Smoothies have been one of several breakfast options for me for years, but it wasn't until recently that I started to have them every single day. And it has really made a difference. Somehow I am no longer stressing over what to eat in the morning, especially if I'm trying to get out of the house quickly. And I'm not worried about eating "too much," or too much of the wrong thing. I guess this makes me sound neurotic, but it's been life-enhancing so I wanted to share it with you. The smoothie is an opportunity to pack all sorts of nutrition into a drink that is light yet substantial, irresistibly creamy and smooth. We are hard-wired to crave something sweet and, rather than trying to reinforce some Draconian regimen of denial, I like to address that first thing in the morning. So will you, once you start your engines with a scintillating smoothie.

10.24.12 (I Did It) My Whey

I continue to be enamored of whey and hope my recipes for slow-cooked onions or crisp pickles may have piqued your interest. I suggest you get your hands on some by making fresh cheese or paneer (which might lead you down another path to this Indian dish or this one). I've learned that whey is also referred to as "milk serum," which sounds like something from the world of molecular gastronomy. But this yellowish, watery liquid is simply what's left when milk curdles, either from the use of rennet (sweet whey) or acid, like lemon or vinegar (acid whey). Whey was once a popular drink in inns and coffee houses (in the 1700s!) and has been used for centuries by European, Middle Eastern and Asian peoples to preserve food and in all manner of fermented tonics. It's an excellent source of minerals and digestive bacteria, and acts as a remedy for an upset stomach. Sipped on its own, whey is kind of an acquired taste, with a faint cheesiness that is not unpleasant. When combined with honey and frozen into sorbet, it's simply divine.

10.17.12 Whey To Go

Last week, G and I celebrated our fifth wedding anniversary over dinner at Blue Hill at Stone Barns, a fascinating restaurant previously written about here, here and here. We were joined by G's sister and her husband who were celebrating their twelfth. We'd all eaten at the restaurant before—multiple times, in fact—and while we were excited for the 8-course tasting menu, we also faced it with a bit of trepidation. We worried about stuffing ourselves sick, and were slightly aghast to be worried, given the amount of money we were poised to fork over. High class problems, right? No doubt about it. Despite having a beautifully prepared meal that delighted us to no small degree, we all came away questioning whether we ever wanted to eat that way again. It has begun to seem too rich, too precious, too prolonged. So I felt a sharp pang of recognition when I came across this recent article in the New York Times. (Don't miss the equally illuminating and entertaining reader comments!) It explores the current state of the tasting menu in elite restaurants across the country, and from it I can conclude that we are not the only ones disenchanted with the onslaught of dishes and the equally overwhelming prices. That said, I found much of what I ate at Stone Barns to be extremely inspiring, including these divine onions slow-cooked in whey.

7.19.11 Say Cheese

I think I've already mentioned Julia Moskin's D.I.Y Cooking Handbook for the New York Times online right? It's where I got inspired to make vin d'orange. (Which turned out great, incidentally.) She's got a bunch of useful recipes there, including a few that overlap with some of mine. Like one for making your own ketchup; and preserving lemons; and this one for making your own fresh cream cheese. Hers is a slightly shorter process because she uses rennet, which causes your milk to curdle right away. I learned my technique from Nourishing Traditions, where you simply let milk sit out on the counter for a few days until it curdles on its own. Actually, some good bacteria helps it along. You separate the curds from the whey (reserving the latter for making pickles and sauerkraut, and stirring into soups and smoothies), then drain the curds so they come together in a light, creamy cheese. It's kind of magical.

4.30.10 Cheese Wiz

You know how biscotti means “twice cooked” in Italian? Well, ricotta means “re-cooked.” I never knew why until I decided to investigate this wonderful light cheese. We associate it with Italian cooking but it's also traditional around Hanukkah, used to stuff blintzes or in cheesecake. It turns turns out that ricotta is made from whey, the low-fat and nutritious liquid that is a by-product of cheese production. Once cheese is made from the curds, a second cooking of the whey results in ricotta. I’ve actually perused quite a few recipes for ricotta, and hardly any mention this. They all call for making it with whole milk, some even adding cream, but this is not the traditional way and results in something quite a bit richer, albeit delicious, that is more along the line of farmer's cheese or fromage blanc. Splitting hairs, you say. And you may be right. If you're not making fresh cheese you probably won't have whey availalbe, so go ahead and make your rich and delicious ricotta from whole milk. (Try the recipe below.) Or buy the sinful version from Salvatore Brooklyn. They also have a smoked one that will make your toes curl under.
