6.14.10 Green Light

Spinach plucked fresh from the garden is one of the great joys at this time of year. Thought to have originated in ancient Persia, Arab traders carried spinach into India, from where it was introduced to China. The earliest record of spinach is in Chinese from around 647 AD. When Catherine de’Medici, born in Florence, became queen of France, she insisted that spinach be served at every meal. That’s why, to this day, dishes made with spinach are known as "Florentine."Highly nutritious and full of antioxidants, spinach is a rich source of vitamin A, vitamin C, vitamin E, vitamin K, magnesium, manganese, folate, betaine, iron, vitamin B2, calcium, potassium, vitamin B6, folic acid, copper, protein, phosphorous, zinc, niacin, selenium and omega-3 fatty acids. No wonder it made Popeye so strong! Consider this: a 180 gram serving of boiled spinach contains 6.43 mg of iron, versus the 4.42 mg in a 170 gram ground beef patty. However, spinach contains oxalic acid, which binds with iron and prevents its absorption, so it is best eaten with foods high in vitamin C and calcium that help it be absorbed by the body. These include meat, fish, poultry, dairy, citrus, cantaloupe, strawberries, broccoli, brussels sprouts, tomato, potato, red peppers and white wine. The dark green, crinkly spinach is called Savoy; there is also a kind with flat, smoother leaves; and there is a hybrid type that is somewhere in between. To maximize its nutrients, spinach is best eaten when fresh, lightly steamed or blanched. But I also love it creamed (which means somewhat more cooked down) and raw in salads.

4.18.10 Share a Spread, Spread the Word

Have you see the movie Food Inc. yet? The film takes a good hard look at the state of industrial agriculture and factory farming in this country. Everybody really needs to see it. It is very consciousness-raising and may radically change the way you eat. (At least I hope it will.) This Wednesday, April 21st, at 9pm, PBS will be broadcasting Food, Inc. and is encouraging viewers to throw a potluck and watch the film together. I think it would be wise to eat before watching the film, as it won't exactly enhance your appetite. Even better, throw a vegetarian potluck! I've posted a few more recipes below.

2.28.10 Spanish Steps

Have you been to Txikito yet? As its name indicates (a Basque version of  the Spanish "chiquito," which means tiny), this Chelsea restaurant has only a few tables, and you'd be lucky to grab one on any night (or at lunch). Chefs and owners Eder Montero and Alexandra Raij turn out some wonderful regional Spanish food that takes me back to the years I spent in that beautiful country. My father was a professor of Spanish literature and, every seven years, would take his sabbatical there. I attended the 4th and 10th grades in Madrid, and went back for two semesters off when I was in college. I fell in love with the place, the people, the food, the language. Some of the dishes at Txikito work upon my memory in the way that Proust's madeleine did his: the fat, silky white asparagus of Navarra; the crisp croquetas with their centers oozing creamed cod or chicken; the boquerones, subtly saline white anchovies; but, most of all, the ensaladilla rusa. (Little Russian salad, supposedly invented by a Russian in the late 19th century.)

I used to eat this delightful version of potato salad, a classic Spanish tapa, almost every Sunday morning when I lived in Madrid in my twenties. They served it at a little café right on the edge of el rastro, the big flea market. The most outrageous punks would go there, flaunting their sky-high mohawks, tight leathers and scary piercings. I remember feeling super cool, kicking the sawdust on the floor, smoking my Marlboro reds and taking leisurely bites of this rich, creamy salad. Txiquito's version—potatoes, peas, carrots and bits of green olive bound together with homemade mayonnaise and mounded atop a salty layer of oil-cured tuna—takes me right back there.

2.21.10 Curry in a Hurry

These are the cans of Maesri Thai curry paste that I have written about before. They save you so much time and you'll sacrifice scarcely anything in terms of flavor or quality. They are free of artificial ingredients and preservatives, and their 15 varieties very faithfully replicate both traditional and more unusual curries, from green to red. (The masaman curry paste, for instance, contains garlic, sugar, soybean oil, dried red chiles, tamarind juice, shallots, salt, lemongrass, coriander, cumin, cardamom, cinnamon, bay leaves, galangal, cloves, kaffir lime and citric acid.) My friend Andrée recently appealed to me for some advice on the menu for a dinner party she was hostessing for 10 friends, and a delicious masaman curry was my first thought. With sticky rice and a sweet-tart cucumber salad, this dish makes a simple but slightly exotic meal that few can resist. For dessert, I suggested an easy and supremely refreshing combination of fresh pineapple with grated ginger, chopped mint and lime juice.

1.2.09 Ring It In

My favorite way to ring in the new year is in the company of dear friends, preferably staying in and sharing a delicious dinner. G and I ushered out 2009 in Stone Ridge at the spacious yet cozy home of our dear friend Stephanie. There were 6 of us knocking back Piggybacks (made with bacon-infused bourbon), cooking together and splitting our sides laughing as we played that guessing game from Inglorious Basterds. (Matthew made me Frank Bruni, which is definitely an inside joke.) At midnight, we grabbed pots and pans and headed out into the snowy night to make a ruckus.

11.18.09 Addictive Salad

I invented this salad a few years ago on a freezing January in Boston when I was desperately trying to think of something vibrant and fresh to serve at a friend's baby shower. Something to offset the usual selection of doughy, starchy finger sandwiches and cookies. I remember feeling rather discouraged by the limited selection of mid-winter produce. Finally I picked up some firm, deeply magenta heads of radicchio, a few shiny ruby grapefruits and, on a whim, a chunk of pecorino pepato and a bag of walnuts. I wasn’t really sure where I was going with all this but it just felt right. (You're probably saying “grapefruit with cheese?!” but I swear, it’s delicious.)

9.22.09 Green Goddess

I'm wild about kale. (Too bad I'm still struggling to do it justice with my lame photography.) Especially this dark, bumpy kind, variously known as lacinato, cavolo nero, black cabbage, Tuscan or dinosaur. It's part of the brassica family, as are broccoli, collards and brussels sprouts. Highly nutritious, with antioxidant and anti-inflammatory properties, kale is high in beta carotene, vitamins K and C, and contains plenty of calcium. When chopped, it exudes sulforaphane, a chemical with powerful anti-cancer properties. Most importantly, it's delicious—in my morning juice, cooked with eggs, in bean soup, and even raw in salads.

9.5.09 R.I.P. Sheila Lukins

Back in the 80s, I was among the many crazy for The Silver Palate cookbook. That carrot cake! The famed chicken Marbella! I loved how the book was larded with personal stories and little tidbits of miscellany  in the margins (marginalia?). I adore lists. The recipes seemed somehow both cosmopolitan and accessible, perfect for dinner parties in my starter apartment on East Broadway. When I read about author Sheila Lukins' untimely death from brain cancer recently, I was deeply saddened. And I immediately went out and got some eggplant, picked handfuls of fresh basil from the garden and made this dish—one that will remain forever in my repertoire. It's excellent with grilled lamb but since I don't really like lamb, I eat it with grilled fish or tomatoes with feta.
