3.4.13 The Other White Meat

Are you eating your vegetables? It's becoming quite trendy to eschew meat at the center of your plate. This style of eating has long been embraced in Asia and out of necessity in many poorer countries. In fact, it's not so dissimilar from the Mediterranean diet, which was endorsed yet again in a study released last week. It's really no big news that a vegecentric diet is the way to go, as evinced by this 1819 quote from Thomas Jefferson: I have lived temperately, eating little animal food, and that not as an aliment, so much as a condiment for the vegetables which constitute my principal diet.

I love the notion of animal products as a condiment and often use them this way in my cooking. Small amounts of highly flavored meat or fish—smoky pork, spicy sausage, salty fish roe, pungent anchovies—add just the right hit of umami to salads, pastas and vegetables, raw or cooked. Look to what some of the more ingenious chefs are doing for ideas on vegetables dishes with heft. Consider the oven-roasted slab of broccoli I had at The NoMad. Daniel Humm made it the star, with a little bacon to keep things interesting. This cauliflower dish is from Dan Barber, who never met a vegetable he didn't like.

2.8.12 Little Lamb

Valentine's Day is less than a week away. And? you say. Surely you don't buy into such a trumped-up, commercialized holiday! Ah, but love. Love. How can you resist a day set aside especially for the celebration of Love? Consider dispensing with the chocolate and fancy reservations and wrapped presents, but do compose a poem or arrange a fragrant nosegay. Draw a hot bath, or proffer a massage. And by all means, cook something indulgent for your beloved. Rather than the rich, heavy foods that seem to be the norm—how sad that short ribs have been rendered cliché—you may want to consider something a bit lighter. Fondue or a Japanese hot pot, perhaps, to underscore the shared nature of the meal. Is there anything more intimate than two forks clinking together in the same bowl? Serve a dry martini or a delicious fruity wine to set the mood. Whip up a sweet finish that lingers in the mouth as you sing each other's praises. If you are not in love at the moment, it's also wonderful to be with close friends, and celebrate another kind of love. There are so many. Take it wherever you can find it. 9.28.11 Stoned Again

It seems that birthday celebrations call for Stone Barns. And not just birthdays—the place is thick with tipsy bridesmaids and full-on wedding parties. You may recall that last January I chose to turn 48 within its glorious confines. G and I dined there recently with a group of friends to fête the marvelous Matthew on the occasion of his 50th. Each of the three times I've been in the last 18 months have been revelatory experiences; not only the food, but the service and the ambiance elevate this restaurant above most others. It's part of a multi-million dollar farming, education and hospitality enterprise, and much of the food served is raised on the grounds or locally. This summer, I was lucky enough to get a little window into the kitchen when my sister-in-law secured an externship as part of her program at I.C.E. In lay terms, that means she worked there. She assuaged my jealousy by religiously recounting tips, techniques and stories from behind the scenes at one of this country's finest restaurants. It was almost as good as eating there...

1.24.11 Everybody Must Get Stoned

It was my birthday on Saturday and I had the great fortune of celebrating with friends at Blue Hill, the restaurant at Stone Barns in Pocantico Hills. You may remember I wrote about another delectable meal I enjoyed there back in May. In a perfect world, I would eat there four times a year. The menu is linked to the seasons and what is grown on the farm—beef, pork and lamb included—and sourced locally. Stone Barns is a beautiful and fascinating place, an educational center as well as a non-profit working farm and a fine dining restaurant; please visit their websites (here and here) to learn more about the many things that go on there.

Stone Barns in Pocantico Hills
Last night I dined at Blue Hill at Stone Barns, the much lauded restaurant that is at the heart of the Stone Barns Center for Food and Agriculture. The restaurant sources pristine ingredients from the surrounding fields and pasture, as well as other local farms, and some farther afield--including the Barber's own family farm in Great Barrington, MA, also called Blue Hill, where it all began with their grandmother. There are just two tasting menus available—5 courses or 8—and the menu lists only a long series of ingredients (more than 100), so that diners can see the palette with which the chef Dan Barber is working that day. He is deeply invested in building flavor literally from the ground up. I once saw him speak about his attempt to grow carrots flavored with almond. (It didn't work.) This is seasonal, farm-to-table eating in locavore heaven. Their websiteis very deep and rich, and you can lose yourself for ages there reading fascinating stories and watching wonderful little videos about their eclectic providers (the mushroom farmer, the berry guy, etc.). I recommend a visit—to the website and the restaurant, and to the farm, for that matter.

5.11.10 Going Green

Someone recently accused me of eating a lot of kale. They said it as though it were an accusation, like I needed to justify myself. I hereby declare myself a lover of kale. I freely admit that. (Proof positive is this post. And this one. And this one.  And this one.) The stuff is good. Tastes delicious, is very versatile and packs a wallop of nutrition. Do you read Goop? Gwyneth Paltrow's blog sort of irritates me. I can't really pinpoint why but I think it just might have something to do with her total and unmitigated sense of entitlement. Just because you can spend two hours a day working out with Tracy Anderson in your custom-built blonde wood yoga studio in back of your lovely house in East Hampton, Gwynnie, doesn't mean we can. Grrrr. Yet we can make her I-need-to-lose-5-pounds-quick-for-this-movie-premiere kale juice cocktail (with lemon juice and agave nectar). Or even better, we can use kale to whip up deliciously salty-crunchy chips that we can munch on to our heart's content without even missing those salt-&-vinegar kettle chips one iota. Perfect for getting into fighting shape. Beach weather is coming, hard as it may seem to believe when we're currently at 28 degrees upstate!! (All those new little green leaves? Drooping in the cold, poor darlings!) So you gotta eat your kale, bay-bee!
