11.8.16 Top of the Morning

Not everybody has time to make a special breakfast every single day. Some of us are running for President. Others are trying to get the kids off to school. Still others don't have access to things like coconut flour and eggs fresh from the farm. I'm aware that I'm writing from a place of privilege, but this is where I am right now. If it's all you can do to rip open a package of instant oatmeal, you'll get no judgment from me. Let's just stand together for breakfast in general, for doing the best we can and for a country in which we are free to make choices. Are you with me? Good. Because I'm with her.

1.19.12 Ever So Gingerly

The opening of Greens Restaurant in San Francisco in 1979, under the auspices of the San Francisco Zen Center, forever changed the image of vegetarian food in this country. I began cooking from The Greens Cookbook in 1989, during the year I returned home to Santa Cruz as my father was dying from stomach cancer. It opened my mind to a new kind of cooking based upon vegetables, of which there was a constant, seasonal stream from our garden and local farmers markets. I also had a chance to eat at the restaurant, a beautiful spot overlooking the bay where a subtle message of health and harmony was offered in an elegant organic environment. The restaurant has since evolved toward a lighter, leaner cuisine, and I think the latest edition of the cookbook also differs somewhat from the one I have, but the essential philosophy of founders Deborah Madison and Edward Espe Brown remains intact. I have misplaced the book now (hopefully it's in storage somewhere), but I recall many of the dishes: saffron custard with eggplant; butter-fried potatoes with curry; baked polenta with tomato and gorgonzola; and a simple recipe for dried apricots poached with ginger and served cold with a dollop of crème fraîche.

10.27.11 Sweet Bread

Don't get your knickers in a twist, I'm not giving you a recipe to prepare strange and frightening innards. Not that I wouldn't! But no, this is considerably more tame. Although I hope it make take you out of your comfort zone as far as baked goods go. Why? Because it's made with a lot of buckwheat flour and that can have scary health-food store connotations. Trust me, you don't need to be wearing Birkenstocks to go for this delicious cake. It's actually inspired by an incredible muffin from Peels that I've enjoyed on several occasions. The pastry chef there, Shuna Fish Lydon, really rocks, as you can see by her blog, not to mention her addictive graham crackers, brown butter rice krispie cubes and other tweaked-homestyle treats. I've lauded her skills before.

6.13.11 Meaty Monday: True Grits 2.0

Bacon for breakfast is a treat. Not an everyday thing, but especially welcome when there's a day of gardening ahead, or something more strenuous than sitting in front of the computer. Crisp, smoky, salty, sweet and finger-lickin' good, bacon is damn near irresistible. (Especially if you know for a fact that it doesn't come from a pig raised in misery on a feed lot.) And boy does it go well with corn. Corn, bacon and avocado salad. Corn pudding with bacon. Cornbread with crispy pork cracklings. After last week's rather esoteric grits posting that involved draining and drying your grits before eating, I thought it might be a good idea to share a recipe that's a little less involved. I was ordering buckwheat and brown rice flours from Anson Mills to do some gluten-free baking, and I also picked up a bag of their coarse-ground Pencil Cob brits—so-called for the very slim corn cob. I simply boiled them with water, stirred in a little cream, some sharp cheddar and a handful of minced jalapeño and there was breakfast. A couple of slices of bacon fried to perfection and it became a breakfast of champions. So if you were daunted by my purple Forbidden Rice grits, these should send you racing to the stove.

6.8.11 True Grits

In my quest to offer you more alternatives to the dreaded, over-processed, denatured, cardboard-like breakfast cereals we should all be rejecting forever, I hereby tempt you with a delicious bowl of nutty, nutritious and quite comforting grits. As you can see, I've gotten all fancy with purple rice and, though you need not be so esoteric, I highly recommend you source your grits from somewhere like Bob's Red Mill or Anson Mills. Both offer a variety of organic heirloom rices and grains, all painstakingly milled and very fresh. The taste really illustrates the difference, as does the quality of the nutrition you get from products like these. Please don't feed your kids (or yourself) instant oats or Rice Krispies or cornflakes when you can give them healthy, whole foods instead. And grits are a great vehicle for other flavors, like soft-cooked eggs, crispy bacon, spicy Tabasco, creamy yogurt, maple syrup, strawberry jam, cultured butter—pretty much anything tastes good plopped on top of or stirred into this yummy bowl of mush. This particular bowl I ate with a dollop of crème fraîche and some crunchy smoked sea salt.

5.3.11 Lounge Lizard

After 18+ hours in the air—all of them spent comfortably reclined in my most excellent Singapore Airlines business class cubby—I am now ensconced in the business class lounge at the Singapore Airport, availing myself of the copious complimentary amenities. Chief among them is the extensive international breakfast buffet, a somewhat more subdued version of the lavish spread found in most Asian hotels. Lest they fail to please every last guest, these dining rooms offer an international round-up of every conceivable breakfast fodder—and I'm talking pancakes, waffles, gelato and brioche, omelettes and eggs every which way, crepes, full-on English fry-ups with kippers and sausage and tomatoes, croissants and muffins of every stripe, groaning platters of tropical fruit, miso soup, Vietnamese pho, Chinese dim sum and congee, Indonesian fried rice, hoppers, porridge, muesli, and that's not all. When I stayed at the Conrad Hotel in Bangkok with my friend Lisa, we tried desperately to monitor our intake every morning but inevitably trudged out for a day of sightseeing, shopping and more eating with already pronounced potbellies. To wit, I landed here at 5am, it's now 7, and I've already been to the buffet twice.

4.13.11 Crème de la Crème

Certain foods just have a universal appeal. Consider the dumpling, for instance. It's found in so many cultures, this rose by any other name: knedlíky (Czech), kreplach (Jewish), pantrucas (Chile), manti (Armenia), ravioli (Italy), buuz (Mongolia), pangsit (Indonesia), dim sum (China), gyoza (Japan), mandu (Korea)...the list goes on and on. Yogurt—and soured milk of all kinds—may not be quite as common, especially given that many African and Asian countries don't do dairy, but among those that do it's a deeply-held tradition. From straight-up yogurt to crème fraîche to quark to ricotta to paneer to Mexico's indigenous Nahuatl jocoque árabe, people have long been introducing bacteria or acid to milk with delectable results. Greek yogurt has become hugely popular in this country over the last few years, thanks in no small part to the ubiquitous Fage (pronounced "fa-yeh") brand and now Chobani, too. It's simply yogurt which has been strained to remove the whey, giving it a much denser, creamier texture. Sometimes this style of yogurt is even enriched with extra butterfat or powdered milk.

4.5.11 The Golden Egg

One of the more beloved tales in my family's rich lore is of how my father, very early in his marriage to my mother, came up behind her as she was leaning into the oven and goosed her—except it turned out to be my grandmother!! I can just see the shock on both of their faces, and imagine the explosion of laughter that followed. They both had a wicked sense of humor, especially my dad. He and my maternal grandparents loved each other dearly, once the deeply Christian Chávez family got over the idea that their beloved eldest daughter was going to marry a Jew.

But this is about another sort of goose altogether. A goose egg, actually, no doubt laid by a female relative of the lovely fellow from River Brook Farm who was the centerpiece of our Christmas dinner.

2.17.11 Cereal Killers

As in bleached, refined, high-heat-processed, denatured, extruded and packaged breakfast cereals. You know the cutesy O's and puffs and crisps we all grow up eating? Poison. In reading Nourishing Traditions, Sally Fallon's excellent, information-packed guide to eating and cooking for maximum health and nutrition (and enjoyment!), I learned something that I had sort of intuited already but that still seemed shocking when I really understood the facts: the extreme processing to which much packaged food is subjected not only robs what we eat of essential nutrients but can actually be toxic to us. It's particularly true for grains and nuts, which contain fragile oils that turn rancid, and thus harmful, when subjected to heat. That's what makes breakfast cereals so bad for you. The grains are totally broken down and then extruded at extremely high temperatures; ever notice how little they resemble any actual food? Even those "healthy" boxed cereals should be ruled out, including granola and rolled oats. For the most part, convenience foods are not at all convenient for our bodies. As easy as it is to dump some Cheerios and homogenized milk into a bowl, it takes just 15 minutes more to cook up a breakfast that actually has some nutritional value.

2.15.11 Chickening Out

This past weekend G and I attended a workshop about raising chickens. It's something we've been daydreaming about for a while, because we've long enjoyed the delicious eggs from River Brook Farm. And because we could really use the poop to fertilize our garden. So we signed up to learn about this ancient enterprise from Mark and Barbara Laino at Midsummer Farm in Warwick. This amazing couple is into organic, sustainable farming; they grow vegetables and herbs, raise animals, and hold down full-time jobs. Barbara is also a holistic nutritionist, and I was thrilled to see several pages of egg recipes from Nourishing Traditions (one of my bibles) in the packet they send home with you.
