12.17.14 Down to the Bone (and a Caramels Giveaway)

I fell down a deep well last week. G was away for a few days, it was bitter cold and night seemed to descend before each day had barely begun. A weighty cloak of despair settled over me as I sank into the couch in front of the dying embers of the fire. I questioned my purpose. I listened to the sneering voices that crowded my mind. I grew listless and small. I sent a text to my husband: I feel frightened and disconnected. And then I realized I had not left the confines of our tiny cottage in four days! I forced myself outside, spent nearly an hour chipping away with a shovel at the ice on our front stoop and then made it to yoga for the first time in a week. When I got home, I was a new woman. Light and movement had managed to penetrate that bleak darkness. Dear reader, I was SAD—as in suffering from Seasonal Affective Disorder. It was no joke, but I am better now and committed to going outside every day, no matter what the weather has up its wicked sleeve. 

I'm also done with nuts, chocolate and sugar for the season. Enough! Those things are particularly bad for my constitution. They bring me down. Instead, I have stocked the fridge with pomegranates and sweet-tart clementines, a gorgeous block of Stilton and some fresh chestnuts. And, as always, nourishing bone broths. Don't you love it when something that has been around for millennia—fasting! kale!—suddenly becomes a trend? So it is with bone broths, which are on everyone's lists for "what's hot in 2015." 

Before we go any further, let’s consider how stock differs from broth, often merely a question of semantics. A general consensus seems to be that stock is a relatively clear, unsalted liquid made by slowly simmering bones and sometimes vegetables, which is then used as the basis for sauces and soups. Broth is a simple soup in itself, more highly seasoned than stock and perhaps containing bits of meat. In most recipes the two can be interchanged, though stock is more neutral, with its salinity, strength and seasoning dependent on how it will be used.

1.17.12 Souper Bowl

Even though it may seem like I am the most organized kitchen bitch on the planet, there are definitely times when I reach for something and it's not there. Although once I was not above keeping canned (or boxed) stock in my pantry, I now resist that easy (and nutritionally challenged) out. Tragically, my source for chicken feet dries up in the winter and though I'll make stock from whole birds, it's just not as good. Dashi, the Japanese broth made with kombu and bonito flakes is one option, but its flavor is very specific. So when I came across a recipe in The River Cottage Preserves Handbook for a homemade vegetable bouillon, I got very excited. It's basically just a bunch of vegetables ground into a paste and preserved with salt. You stir a bit into hot water to make an authentically flavored stock for soups, stews, curries, whatever you like.

10.22.10 What The Pho

This seductive soup is pronounced "fuh," like the word for fire in French. I had wanted to post a gorgeous "pho"-to of a big, steaming bowl of it, but we ate the entire pot before I got the chance. So instead, here's one of a woman in the market in Saigon scarfing down this wonderful national dish. Pho is traditionally eaten for breakfast in Vietnam, but it goes down like a charm for lunch and dinner, too. It's great stuff for cold weather eating, but that doesn't prevent South East Asians from having it in the raging heat. A rich but clear beef broth, infused with star anise, clove, cinnamon and ginger, it is traditionally served with slices of raw sirloin, shallots, bean sprouts, cilantro, Thai basil, mint, lots of slippery, chewy rice noodles, a squeeze of lime and maybe some chile. It's not so complicated; mostly, it just takes time. I love how you char ginger and onions directly over the flame of your burner; it imparts just a hint of smokiness that is very reminiscent of outdoor cooking in Asia. As with all stocks, you make this ahead so you can skim off the fat, and it's quite a healthful and nourishing dish because of the good nutrition from bones. Of course, I urge you to make this with meat from a happy cow, please. For its sake, and for yours.

7.18.10 Liquid Gold

Once you make chicken stock using this recipe, I promise you'll never want to go back to that stuff in the box, no matter how organic it is or how convenient it seems. You can make an enormous vat of this and freeze small containers or even ice cube trays full of it to use for months. If space is at a premium in your freezer, you can boil the stock down to a concentrated and syrupy demi-glace which can later be reconstituted into stock by adding water. I got this recipe from Nourishing Traditions and it's really quite similar to most chicken stock recipes you'll find, with one key exception: you cook it over very low heat for at least 6 and as many as 24 hours! Turns out this make a huge difference in the flavor, color and consistency of the stock. It's rich, golden, unctuous without being greasy and highly flavored. Of course it helps if you are using a whole chicken, or lots of good bony parts, including necks and feet.

1.6.10 Hot Pot 101

I'm winding down from my juice fast. Three days seems like enough this time. My emotions were very front and center today. This can happen when you fast. You become a little vulnerable. Seriously, I'm not being a drama queen. (I'm no Saint Teresa of Ávila, performing devotions of ecstasy, but allow me my little musings, won't you?) I've been working hard on some advertising projects for Target and I may need a few more carbohydrates for brain power. But I have definitely noticed how easy it is to get by on a lot less food. A LOT less. I'm going to try and remember that the next time I'm packing in three squares. OK, yes, I am talking about calorie restriction. (Gasp!) Apparently, it helps you live longer. Not entirely sure that's what I'm striving for; I'll settle for fitting into some of my skinnier jeans. I've just made a pot of very simple vegetable soup: onion, cabbage, celery, carrot, spinach and parsley. Big hunks of everything simmered together in water with a little salt, until it all gets soft. This is the perfect way to break a fast and it's actually quite delicious, clean-tasting and a little sweet. (Also good for when you're sick as it delivers a lot of vital green nutrition and doesn't tax your system.) It's best to come off a fast gently, although I've also been known to cram a fried chicken drumstick doused with Tabasco sauce in my mouth. This time, I'll hopefully segue to a hot pot for tomorrow evening, using my new donabe and a bunch of ingredients G picked up at Mitsuwa, the mecca for Japanese cooking (and eating) in Edgewater, New Jersey.
