7.15.14 Let Them Eat Cake

There's just something about a skillet cake. In general, I find baking a bit fussy—all those steps, all that precision—so when I can make a relatively impressive dessert without taking out the sifter or the Mixmaster, without whipping egg whites or weighing flour, I'm quite thrilled. It's sort of the sweet equivalent of a one-pot meal. If you haven't already tried this apple version, or this plum one, try this recipe for a rustic cornmeal cake studded with ripe blackberries. They are the dark and glorious jewels of summer, their glossy black beads bursting with a subtly floral elixir. I love to see lips and fingers stained with their scarlet juices, which also seep into the cake much like a trifle. It's no work at all to throw this together and the soft moans of pleasure it elicits will only add to your satisfaction.

10.18.11 Southern Style

My first apartment in New York was on Avenue A and 3rd Street, at a time when the East Village was a rather seedy no-man's-land where you couldn't score much more than smack and a good bialy. There were no gourmet stores, no coffee bars, not even an ATM within blocks. But there was the original Two Boots pizza parlor and, for a short and very blissful time, a little joint called Southern Style where you could get some clean and tasty down-home cooking for cheap. To my knowledge, they never served fried green tomatoes but that alone is not enough to explain why I'd never eaten any before making them myself recently. Thanks to new restaurants like this, or this one, Southern food seems to be having quite the renaissance these days, so I'll probably end up sampling someone else's fried green tomatoes soon. But until that day, mine will have to set the standard.

6.13.11 Meaty Monday: True Grits 2.0

Bacon for breakfast is a treat. Not an everyday thing, but especially welcome when there's a day of gardening ahead, or something more strenuous than sitting in front of the computer. Crisp, smoky, salty, sweet and finger-lickin' good, bacon is damn near irresistible. (Especially if you know for a fact that it doesn't come from a pig raised in misery on a feed lot.) And boy does it go well with corn. Corn, bacon and avocado salad. Corn pudding with bacon. Cornbread with crispy pork cracklings. After last week's rather esoteric grits posting that involved draining and drying your grits before eating, I thought it might be a good idea to share a recipe that's a little less involved. I was ordering buckwheat and brown rice flours from Anson Mills to do some gluten-free baking, and I also picked up a bag of their coarse-ground Pencil Cob brits—so-called for the very slim corn cob. I simply boiled them with water, stirred in a little cream, some sharp cheddar and a handful of minced jalapeño and there was breakfast. A couple of slices of bacon fried to perfection and it became a breakfast of champions. So if you were daunted by my purple Forbidden Rice grits, these should send you racing to the stove.
