6.17.11 Father Time

My father died more than 20 years ago, long before his time. The moment of his death is still very clear in my mind. Later I sat with my mother in the upstairs hall, both of us in our nightgowns, averting our eyes as they brought him out in a dark green body bag. I can't say those images have faded, but they are often crowded out by happier thoughts of him as he was in life: the consummate prankster, a sly grin twisting his mouth, a deeply compassionate man, a generous spirit, a scholar. As Father's Day approaches, I long to tell him what has become of me, to seek his approval. Some things never change. He was most often at his desk, talking on the phone with colleagues, proofing manuscripts, scribbling away with the tiny pencil stubs he favored. Intrusions were not wholly unwelcome, especially if you came bearing a small snack. He loved nuts. His favorites were cashews, pistachios, peanuts and Spanish almonds; also hard licorice, chicharrones and chicken liver. In his honor, I post again my recipe for Tuscan chicken liver paté—a shout-out to both his humble Jewish roots and his later-acquired European sophistication.

11.24.10 Prelude to a Feast

I don't want to harsh your mellow, and I do know that Thanksgiving is a special day—a time to throw caution to the wind and loosen your belt—but I just read that "more than half of Americans will have diabetes or be prediabetic by 2020, at a cost to the US health care system of $3.35 trillion, if current trends continue unabated." Staggering, no? To what trends does this refer? Too much processed food, too much sugar, too much fat. So I'd like you to reconsider the cream-laden dips and greasy chips that seem to be so popular for snacking on before the big turkey feast. All those cheese plates and fistfuls of roasted nuts that go so well with the wine and cocktails you'll inevitably be knocking back. Look, I'm no killjoy. I want you to indulge! But I also want you alive and healthy and fitting into your skinny jeans. So ponder some of these options, starting with a plate of fresh, crunchy, spicy watermelon radishes—in season now!—irresistible when sprinkled with flaky Maldon sea salt and perhaps drizzled with a little green olive oil. It's the perfect way to really wake up your palate.

4.15.10 Better Than Bubbe's

The editors of Food52 picked one of my recipes as the wildcard winner this week! Hooray! They called my Tuscan chicken liver paté “a rich dose of umami,” which indeed it is thanks to the addition of anchovy, capers, parmesan, shallots, garlic and wine. This is not your Jewish grandmother’s chopped chicken liver! It is a gussied-up Tuscan version—taught to me by a diehard Italophile—and it really is a winner, especially when served with a garnish of fried sage leaves and a glass of prosecco or, my personal favorite, Lambrusco. Amanda Hesser tweeted that it would be a good prelude to spaghetti carbonara, but I can't agree—better before a whole roasted sea bass served with broccoli rabe.
